Watermelon Blueberry Banana Split
Health Bites

What you'll need:

  • 2 Large Bananas

  • 8 Scoops of Watermelon (use ice cream scoop, scoop balls of watermelon, and remove seeds)

  • 1 pint Fresh Blueberries

  • 1/2 Cup Vanilla Low-Fat Yogurt

  • 1/4 Cup Crunchy Cereal Nuggets

How to make it:

  • Peel bananas and cut in half crosswise; cut each piece in half lengthwise.

  • For each serving, lay 2 banana pieces against the side of a shallow dish.

  • Place scoop of watermelon at each end of the dish.

  • Fill center space with blueberries.

  • Stir yogurt until smooth; spoon over watermelon.

  • Sprinkle with cereal nuggets.

Makes 4 servings.

English Muffin Pizza

 

What you'll need:

  • 4 English muffins, split in half

  • 1 can (8 ounces) pizza sauce

  • 8 slices cheeses

How to make it:

  • Preheat oven to 400 degrees.

  • Broil English muffins until lightly browned, or toast them.

  • Spoon 1 tablespoon of pizza sauce on each English muffin half.

  • Trim off the corners of the cheese to make circles. If making some for children, try cutting out a face on each circle using a paring knife.

  • Place one slice of cheese on each pizza muffin.

  • Bake at 400 degrees for about 8 minutes, until cheese melts and is very lightly browned.

Makes 8 halves.
