As bean seeds mature their nutrient content changes dramatically. Both green beans and cooked dry beans should be part of a balanced diet.
Dry beans are part of two food groups in the Food Guide Pyramid, the vegetable and
meat/protein groups. One half cup of cooked dry beans is a vegetable group serving.
Because cooked dry beans are high in protein they are eaten as a protein (meat,
poultry, fish, dry beans, eggs, nuts) serving.
The serving recommendation is one cup. Cooked dry beans combined in a dish with meat will provide a lower fat protein serving than a serving of meat alone.
The WIC recommended food serving size for children under six is one tablespoon per year of age. For example, 4 tablespoons of beans for a four year old child.
